Tener una vinoteca en casa

¿Alguna vez has guardado un vino para una ocasión especial, y al llegar el día, el vino se había estropeado? No te apures si la respuesta es sí, a todos nos ha pasado.  Se dice que el vino mejora con el tiempo, pero eso no es del todo cierto. Depende del vino, y de las condiciones en las que lo guardamos. Por lo que hoy vamos a poner un poco de luz al tema.

Qué es  una vinoteca y para qué sirve

Si buscamos en el diccionario la palabra vinoteca encontraremos dos significados; el primero es el lugar donde se exponen y venden vinos. Pero éste no es el que hoy nos ocupa, sino el segundo, el que se refiere al aparato frigorífico que sirve para conservar los vinos en buen estado.

De lo que se trata es de guardar el vino en unas condiciones óptimas para que sufra los menores cambios posibles en cuanto a su color, acidez, textura y sabor.

Los vinos que consumimos a diario, no están pensados para guardar, ya que no mejoran por mucho que los dejemos tiempo en la botella, sin embargo, sí que existen vinos de calidad que necesitan un tiempo de reposo para reducir su acidez, estos mejoran con el tiempo, siempre que estén en el lugar adecuado, con la luz y temperatura que necesitan.

Así pues, si quieres tener tu propia colección de vinos en casa, lo mejor será que empieces a pensar en una buena vinoteca.

Ventajas de tener una vinoteca en casa

La principal, y sin duda la más importante, es poder tener siempre un buen vino a punto para invitar a los amigos a un maridaje de vino con queso ¿no te parece?

Dicho esto, ahora vamos con las ventajas más técnicas:

Controlar la temperatura: es importante para la conservación del vino que la temperatura sea lo más estable posible, situándose entre los 15 y 20 grados.

El exceso de calor puede hacer que el vino se deteriore, e incluso puede llegar a secar el corcho, lo que podría dejar vía libre a la entrada de oxígeno a la botella, provocando su oxidación.

Conseguir la humedad ideal: deberíamos conservar el vino a una humedad del 80%. Un exceso nos podría originar mohos que contaminasen el sabor y la sequedad nos provocaría lo mismo que el calor excesivo.

La posición horizontal: guardar la botella de vino en esta posición es necesario para conseguir el contacto del corcho con el vino, lo que hace que éste conserve la humedad, y no pierda elasticidad.

Protección de los rayos UV: la luz en exceso puede ser también un gran enemigo del vino, por ello lo ideal es guardar las botellas en un lugar oscuro.

Prevención contra olores fuertes: una botella de vino cerca de una fuente de olores fuertes podría arruinarse fácilmente. La porosidad del corcho podría filtrarlos y llegar a contaminar el vino.

¿Qué vinos puedo guardar en una vinoteca?

No todos los vinos se pueden guardar, así que deberemos informarnos antes y conocer bien sus características. Establecer un período de guarda determinado de antemano para cada vino resulta arriesgado, ya que tiene que ver el tipo de uva, el proceso de elaboración, incluso tu gusto personal.

Lo que podemos asegurar que influye en este tiempo de guarda es su acidez, ya que a mayor nivel de acidez, las bacterias que pueden atacar el vino lo tienen más crudo, por lo que ésta actúa de conservante natural. Una alta tanicidad e intensidad frutal también favorecerán que un vino se pueda guardar más tiempo.

Tipos de vinoteca

En Corberó tenemos dos tipos de vinoteca para que escojas la que más se adapte a tus necesidades. Un modelo con capacidad para 30 botellas (112 L) y otro para guardar 99 botellas (200 L). En ambos casos el rango de temperatura es de 4º a 16º, tiene luz interior y los estantes son de madera.
